This course is delivered from the following site:
- HLC Levin Campus
This is a programme where graduates will gain a New Zealand qualification at Level 3 and you will achieve an internationally recognised qualification through City and Guilds.
The design of the programme allows you to continue to work in a professional catering establishment with periods of study arranged to suit your shifts.
The whole programme will be supported through an internationally designed e-learning medium which you will be able to access 24/7.
You will spend some time at HLC under the guidance of qualified chefs with strong industry experience.
Your experience in industry will help to produce basic meat dishes, stocks and sauces, fish, farinaceous, pastry and egg dishes suitable for commercial kitchens.
On successful completion of the course students will receive:
- NZ Certificate in Cookery Level 3
- City and Guilds Certificate in Food Preparation and Cookery

This programme is open entry.
Full attendance is encouraged to maximise learning opportunities and to optimise success for students. To meet external examination requirements, 80% attendance of practical classes is compulsory.
It is recommended that applicants have met the literacy and numeracy requirements for NCEA Level 1 or equivalent.
Students need to be aware of the physical requirements for operating in a commercial kitchen environment. Students will be advised to put any special needs or requirements in writing and advise the Head of School before the programme begins.
